A stricter baseline schedule than many kitchens expect

Restaurant owners who have worked in Harrison County are often used to thinking about a 90-day mark. Hancock County's ordinance sets a different baseline: 30 days for grease interceptors, unless the Authority grants an exception, with 90 days as the outer limit even then (details and source below). Grease trap rules in Bay St. Louis: Hancock County Utility Authority

Bay St. Louis is in Hancock County. The Hancock County Utility Authority (which abbreviates itself "HANCUA" in its ordinance, not to be confused with the Harrison County "HCUA") adopted a Fats, Oils, and Grease Ordinance in November 2011. It applies to non-domestic users of the Authority's wastewater system, including restaurants, food processors, hospitals, hotels and motels, and nursing homes. Key points:

  • 30-day baseline for interceptors. Grease interceptors must be completely evacuated at least every 30 days, or more often when 25% or more of the wetted height holds floating material, sediment, oils, or grease, when discharge limits are exceeded, or when there is a history of non-compliance.
  • Exceptions, with a 90-day cap. An owner can ask in writing for a longer interval, granted case by case, but every interceptor must be fully evacuated, cleaned, and inspected at least once every 90 days.
  • Manifests. Each pump-out must be accompanied by a manifest, and the generator keeps copies for five years.
  • No additives. Surfactants, solvents, and emulsifiers (including enzymes, soap, diesel, kerosene, and terpene) may not be put into a grease interceptor.
  • Penalties. The ordinance sets a schedule of civil penalties, starting with a written warning and rising with repeat violations within a two-year period, plus separate penalties if a generator causes a sewer line blockage.

Confirm with the Hancock County Utility Authority and the City of Bay St. Louis utility department how the ordinance applies to your address.
